It’s official. Summer is here! Perfect timing for a grilling recipe! This recipe is originally from Oprah’s magazine. My husband isn’t a huge fan of chicken but he even really liked this. It’s a nice easy meal when you pair it up with a side salad or some pasta salad.
Mustard Grilled Chicken
½ cup lemon juice
1/3 cup Dijon mustard
2 tsp basil (I used dried)
1 tsp Italian seasoning
2 tsp lemon zest
Salt & Pepper (to taste)
4 boneless, skinless chicken breast halves
Mix together the lemon juice, Dijon mustard, and all of the spices in a bowl. Pour over chicken in a shallow baking dish, turning to coat. (I use my Tupperware marinader container. So handy!)
Marinate in refrigerator, covered, for 2-4 hours.
Grill or broil in the oven.
